Guiltless banana strawberry cream pie (vegan and gluten free)April 15, 2019

Check out this yummy all natural ingredients, super simple to make, and it happens to be vegan and gluten-free.
1 C overflowing almonds
1 C overflowing pitted dates
11/4 C cashews (soaked overnight or at least a minimum of 5 hours)
3 1/2 Tbsp coconut oil or avocado oil
1/4 C agave nectar
1/2 large banana
1/2 C chopped strawberries
1/3 C coconut creamer, plain
1/2 tsp pure vanilla extract
1/4 tsp sea salt
2 Tbsp lemon juice
- To make the pie crust, add the dates to the food processor until mushy and then add the almonds until it is a sticky consistency.
- Place the mixture in the pie pan, use fingers to mash and shape into a pie shell. Place into the freezer until pie filling is ready.
- Add the rest of the ingredients into the blender and blend until smooth and creamy, usually about a minute or two. Then take out pie shell and fill it with the smooth and creamy filling.
- Place pie in the fridge for about 4 hours covered.
