Chicken noodle soup in 25 minutes using an Instapot

1 Tbs olive oil

1/2 onion, diced

4 large carrots, chopped

4 celery sticks, chopped

1 tsp parsley, diced

1 tsp thyme

1 tsp oregano

1 tsp salt

1/2 tsp pepper

6 cups water 

2 chicken or vegetable bouillon cubes

2 pounds chicken breast or thighs uncooked. You can use chicken with bones and skin or without. 

*If frozen add 2 more minutes to the pressure cooking time

6 oz eggs noodles


Set your Instapot to saute setting and the time for 7 minutes. Add olive oil, onions, carrots and celery and stir for a few minutes. Then add parsley, thyme, oregano, salt, and pepper. Add the chicken and water and bouillon cubes. Now set the Instapot to manual setting (pressure cooking) and set the time to 7 minutes. Once done let the Instapot sit and wait about 10 minutes for the natural release process on the Instapot. After that, open the vents on the Instapot and cautiously remove the lid. Add the noodles, set the Instapot to saute setting and let the noodles cook for 6 minutes (always keep the lid off when using saute mode). Turn off the Instapot and enjoy your homemade soup that was done in 25 minutes.
