Cooking on a dime with items on sale at Bashas’ this coming week: a chicken and asparagus meal for just $5.
Bashas’ will have bone-in chicken breast or leg quarters on sale for $.87/lb, up to two packs, starting on Wednesday, July 4th. On Friday, Saturday or Sunday only, you can buy asparagus for $.97/lb and get up to 6 pounds at that price.
Items I purchased for the recipe:
2.5 lbs of chicken breast for $2.17
1 pound of asparagus for $.97
3 pieces of chicken breast, deboned and skinless
1 pound of asparagus
1 tablespoon of butter
1 tablespoon of minced garlic
1 1/2 teaspoon of Italian seasoning
1/2 teaspoon onion powder
salt and pepper to taste
Debone and remove skin from the chicken, cut into 1/2″ thick cubes, season with salt and pepper and set aside. Prepare the asparagus by cutting off the ends and chopping up into small pieces. Then add 1/2 tablespoon of butter to the skillet set at medium to high heat. Add garlic and herbs to the skillet and cook for 1 minute.
Reduce heat to medium and add the uncooked seasoned chicken to the pan and cook for 5 to 7 minutes on each side (chicken should be almost cooked). Keep the chicken in the pan but move to the side and add 1/2 tablespoon of butter and the asparagus into the pan and toss to cook while adding some salt and pepper. Cook for about 4 to 6 minutes. Mix the chicken in with the asparagus and voilà dinner is served without breaking the bank. If you want more of a hearty meal, cook up some rice to serve with the chicken. That should add about $1 more in cost for your meal.
