Make a meal for 4 under $7May 9, 2018
Grocery ads are out and there are tons of deals to help you save money on cooking. I went to Food City and made chicken spinach, tomato quesadillas or tacos for a family of four for under $7. 2 cups of shredded or cubed chicken (Food City has boneless skinless chicken thighs on sale on Thursday only for $.97/lb sold in a value pack with a limit of 2)
4 tortillas large or 8 small (Food City has a pack of 10 small flour tortillas from Dos Ranchitos for $1.69)
2 cups of shredded cheese (16oz Food Club brand at Food City for $1.99)
1 cup of spinach (a bundle at Food City is $1.99 and use at least 1/8 portion)
1/2 cup of cherry tomatoes (I had some already but average cost is $1.50 for 16oz; this recipe will cost $.75 to $1 worth)
How to make:
First, cook the chicken. If you want to add some spices, toss in a pinch of garlic and salt to the chicken while it is cooking and some taco seasoning to taste for some additional flavoring. Then combine spinach and tomato with chicken in a skillet until spinach starts to wilt. Should take about 5 minutes. Then take another skillet and heat up the tortilla on low, add cheese to melt then remove tortilla. Add chicken, tomato and spinach mix to the tortilla with cheese. Fold it in half or roll it up burrito styl, depending on the size of the tortilla you use. Now just enjoy knowing you made a simple, inexpensive, and balanced meal for a deal.
