Make orange chicken and feed a family of four for under $5November 26, 2018
You can feed a family of four with orange chicken in 15 minutes for under $5. I used an Instapot recipe to make the orange chicken. You can cook it on the stove as well, just add everything to the pan and cook until everything is done.
This meal is made with items you will find on sale at Bashas’ this week.
2 lbs of boneless skinless chicken breast or thighs cut up in 1″ cubes
*Chicken will cost you just $2.40 for two pounds because Bashas’ will have boneless skinless chicken breast on sale for $1.19/lb, only on Friday, November 30th from 8am to 8pm.
1 Tbsp olive or sesame oil
3/4 C orange juice
*Bashas’ has navel oranges on sale for $.77/lb. You will need about 3 or 4 oranges which comes to about a pound. Cost for this recipe is $.77.
1/4 C soy sauce
4 garlic cloves chopped
2 Tbsp sugar
1 Tbsp cornstarch
1 Tbsp water
Directions for Instapot:
Whisk together in a separate bowl orange juice, soy sauce, garlic, sugar and set aside. Then add oil and chicken to the Instapot and set the setting to saute mode for 4 minutes to brown up the chicken a little. Turn the Instapot off, whisk together the orange juice sauce again and add it to the chicken in the Instapot. Place the lid, close the vent on the lid of the Instapot and set it to manual timer for 5 minutes. (You want to pressure cook it at this point so follow your Instapot directions carefully). When the timer goes off let the Instapot cool naturally for 10 minutes. (Do not open the vents just let the pot cool down). Then open the vents once it safe. Now combine the cornstarch and water, pour into the Instapot with the lid off, set to saute mode and stir the chicken until the liquid is thick enough for your liking (usuallytakes 5 minutes or less). Once done turn off the Instapot and you are ready to serve. This chicken goes great over white rice or cauliflower rice.
