Make Pollo Loco chicken for $3

Cooking on a dime with items you will find on sale at Bashas’ this week. How about Pollo Loco chicken for dinner tonight without spending a lot of money and time? Total cost with the excellent deal Bashas’ has on chicken thighs and drumsticks came to $3 to make 8 pieces.

Bashas’ is having a phenomenal sale on Friday, September 14th. It is called their lightning sale which is ONLY happening on Friday from 8 am to 8 pm. During that sale, you can buy chicken thighs or drumsticks for $.47/lb and get two packs at that incredible price. Plus, you can buy a pineapple for $.88 each with a limit of four.

Ingredients:

½ t oregano

¼ t ground pepper

¼ jalapeno with seeds and chopped very fine

2 T lime juice

1 C pineapple juice

1 T oil

8 chicken thighs and/or drumstick

 

Directions:

In a large bowl mix up all the ingredients, whisk it together and make sure to remove about ¼ C of the marinade and store in a separate container. Take the marinade and add in the chicken, cover, and store overnight in your refrigerator. When you are ready to cook, heat up the oven to 425 degrees. Add the chicken and marinade to a cast iron pan, if you don’t have one no worries. Just cook the chicken in anything that withstands 425 degrees. The cast iron pan just allows for crispier chicken. Let it cook for 25 minutes then remove the pan, turn the chicken over and add the remaining marinade and cook on the top rack for 3 to 6 minutes until it is crispy and cooked.

*Lastly, if you have a grill this is the most ideal scenario to cook it on. The chicken will turn out better because the grill taste and crunchiness is excellent with this type of chicken. It will turn out just fine in the oven.

Cost break down:

3 pounds of chicken $.47/lb = $1.41

1 jalapeno = $.08

1 C pineapple juice = $.48

3 limes = $1.00

Total cost for ingredients = $2.97

 

*Please note I did not factor in the cost for the oregano, pepper, and oil. These items I already had at home and probably cost a total of $.25.
