In between work, school, working out or just constantly being on the go, breakfast can be rushed. Looking for something you can eat on the way out the door that is simple and healthy? This no-bake energy balls recipe is perfect for breakfast on the go.
Here is what you will need:
1/2 cup peanut butter
1/3 cup honey
1 teaspoon of vanilla
2 cups of oats
1 tablespoon of flax seed
1/3 cup of chocolate chips
1/3 cup of shredded coconut
Start by combining wet ingredients such as peanut butter, honey and vanilla into a large bowl. Mix together until wet ingredients are well combined. Then begin slowly adding your dry ingredients. Fold the oats, flax seed and coconut into the mix.
Cannot find some of these ingredients in your kitchen? You can substitute honey with maple syrup and flax seed with chia seed if you prefer.
Once all ingredients are mixed together begin to roll into tiny balls. Apply non-stick cooking spray or butter to your hands to enable you to roll ingredients into a ball without it sticking to your hands. If you find your energy balls are still crumbly, add more peanut butter to the mix. If this does not work, it may be that your ingredients are too melted. Stick them in the refrigerator for a few minutes and then try rolling into balls then.
Place energy balls on a plate or in a reusable container and allow them to cool for up to two hours. After they are done cooling, serve them up for a tasty on the go breakfast. Energy balls can be kept stored in the refrigerator for up to three weeks.
