Pasta, sausage and grapes make a yummy meal for under $5September 25, 2018
Pasta with ground beef and grapes
1/2 pound ground beef or sausage (cut into 1-inch chunks)
1 tablespoon extra-virgin olive oil
2 cloves garlic, chopped
1 tablespoon and ¼ teaspoon salt
2 cups seedless red grapes
1 cup low-sodium chicken broth
1/4 teaspoon red pepper flakes
10 ounces of pasta
2 tablespoon grated Parmesan
1/4 cup chopped fresh parsley
Set aside a large pot of water and start boiling. Take a large skillet and cook the meat and break it up into small pieces. Once meat is cooked remove it from pan and place on the side. Add oil and cook garlic with a ¼ teaspoon of salt, stir on occasion and cook until golden. Then add grapes, broth and pepper flakes; cook until grapes are softened, should be about 10 minutes. Now take the meat and place it back into the skillet and turn off the heat. Go back to the boiling water and add 1 tablespoon of salt and pasta, cook as directed on the pasta package. Drain the pasta and add to skillet and turn on the skillet to high. Cook until pasta and meat are hot and coat the food with the broth for about 60 seconds. Then serve in a bowl, add Parmesan and parsley on top before serving. Should make 4 servings.
