Today I went grocery shopping and on my list were eggs. My mouth literally dropped to the floor. A dozen eggs were $5.99! What the heck then on top there was a sign taped to the glass doors of the eggs display stating there is a huge egg shortage and prices may continue to increase.

I ended up not buying eggs and instead bought 2 packs of firm tofu for $1.79 each to make tofu scrambled eggs instead. Still a good source of protein but sure won’t break the bank. Still need to pick my mouth up from the cost of a dozen eggs.

Here’s my recipe it is so simple one block of tofu makes about 3 to 4 servings.

Ingredients:

Tofu Scramble Seasoning (for 1 pound of tofu)

  • ¼ teaspoon black salt
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper freshly ground
  • ¼ teaspoon onion powder
  • ¼ teaspoon ground turmeric
  • ½ teaspoon garlic powder
  • 16 oz firm tofu drained

Instructions:

Simply remove the tofu from the packaging and squeeze or press out the water of the tofu. You want it dry. You can use cheesecloth or wedge it between two plates and press out the water.

 

Then take all the spices listed and mix them up in a bowl. Then take the tofu and place it in a cooking pan. Put all the spices you mixed in that bowl and mix them into the tofu.  Cook it for about 5 minutes or until everything is blended and dry out a little.  You can add peppers and any other topping you’d like to your scrambled tofu eggs. You can add more or less of the mixture until it tastes right for you. Have fun with it. I see this recipe as an outline.

Notes

*The Turmeric gives the eggs a yellow coloring.

**The black salt gives the tofu the sulfur smell so it important to mimic eggs. You can order on Amazon, or I found it at H Mart or the Asiana Store.
