400 g or 3and 1/4 cups flour

340 g or 1and 1/2 cups lukewarm water

7 g or 2 and 1/4 teaspoons yeast

7 g or 2 and teaspoons salt

Steps

1. In a large bowl, mix the flour and salt.

2. In a separate cup, stir the yeast into the lukewarm water. Let it sit for about 1 minute to activate.

3. Pour the yeast mixture into the flour. Mix just until the water is loosely combined. The dough should be sticky and slightly rough, not smooth.

4. Cover the bowl and let the dough rest for 2 hours.

5. Generously dust your work surface and hands with flour. Turn the dough out onto the surface. Lightly roll the dough it into a large rectangular shape

6. Cut the dough into 3 equal pieces.

7. Shape each piece by pressing it into a rectangle. Fold it over itself, pinch the seam closed, then gently roll into a baguette shape. And use a knife to serrate each baguette a few times

8. Cover the shaped baguettes and let them rest while the oven preheats.

9. Preheat the oven to 480 degrees. Place a pan of water in the oven to create steam.

10. When the oven is fully heated, place the baguettes on a hot baking pan. Bake for 15 to 20 minutes, until golden brown.

11. Cool on a rack. Serve with good French butter and enjoy.
