One Pot, Three Meals: How I Hack My Weekly Meal Prep (and Save 60% on Groceries)

First, let’s talk numbers. If you’re buying pre-packaged rice, you’re likely paying about $2.00 per pound. But if you head over to the bulk bins at WinCo Foods, you can grab that same rice for around $0.79 a pound. That’s a massive saving before you even turn on the stove!
The Sunday Setup
Every Sunday, I start by tossing two cups of rice into my Instant Pot. Pro Tip: Add a little vegetable bouillon to the water. It’s a tiny cost that adds a huge punch of flavor to every dish you make later in the week.
One Pot, Three Delicious Nights
With that one batch of seasoned rice, here is how my first half of the week looks:
- Sunday Night: A classic, comforting Chicken and Rice dinner.
- Monday Night: High-heat Chicken Fried Rice (leftover rice is actually better for frying!).
- Tuesday Night: Easy Chicken Rice Burritos for a portable, filling meal.
By using chicken (look for those sales!) and bulk rice, you’re eating like royalty on a shoestring budget.
