The Ingredients

For the Meaty Tofu Crumbles:

  • 1 block (350g) Extra-firm tofu (drained, no need to press)
  • 2 tbsp Nutritional yeast
  • 1 tbsp Soy sauce (use GF if preferred)
  • 1 tbsp Olive oil (or veggie broth for oil-free)
  • 1 tsp Chili powder
  • ½ tsp Garlic powder
  • ¼ tsp Liquid smoke (the “secret ingredient”)

For the Pasta & Sauce:

  • 12 oz Spaghetti or pasta of choice
  • 3 cups Marinara sauce (one 700ml jar)
  • Optional Garnish: Fresh parsley, basil, or Vegan Parmesan

Step-by-Step Instructions

  1. Prep the Oven: Preheat to 350°F (180°C). Line a large baking sheet with parchment paper.
  2. Make the Flavor Paste: In a large bowl, whisk the nutritional yeast, soy sauce, oil/broth, chili powder, garlic powder, and liquid smoke until it forms a thick paste.
  3. Crumble & Coat: Break the tofu into chunks and add to the bowl. Use a potato masher or fork to crumble it up. Stir well until every crumble is coated in that savory brown seasoning.
  4. Bake for Texture: Spread crumbles evenly on the sheet.
    • 30 Mins: For a tender, meaty bite.
    • 40 Mins: For a chewier, more “browned” texture (stir every 15 mins).
  5. Boil the Pasta: While the tofu bakes, cook your pasta according to package directions.
  6. Simmer: Heat your marinara in a large pan. Once the tofu is done, stir it into the sauce. Let it simmer for 5 minutes so the tofu absorbs the sauce and toughens up into a “beefy” texture.
